Rum baba with Elderflower Marmelade

6 Portions

1/3 paket yeast

1 tbsp sugar

75 g milk

2 eggs

125 flour

75 butter

Warm the milk. Mix in yeast and sugar. Mix in a big bowl together with eggs and flour. Lastly incorporate the butter until no lumps remains.

Leave in a warm place to rise.

Bake at 200° until its golden in color.

Rum syrup

50g light brown sugar

1/2 Vanilla Pod

80g water

35ml dark rum

1 Spoon of orange marmalade

Heat to an nice flavoursome syrup.

Once the cake is baked, dip it in the syrup, top it of with another spoon  of marmalade, some fresh orange, whipped cream and elderflower flowers if you can find them!
