Pork and coconut stew
300g Pork belly diced
3 Large mushrooms Quartered
3 cloves of garlic choped
1 knob ginger grated
1 large onion diced
2 dried chillies chopped
5 lime leafs
10 curry leafs
3 tbsp sugar
½ cup soy sauce
1 Tbsp Fish sauce
1 tin Coconut
2 Lime juiced
Firstly Fry of the pork belly, browning it slightly in a big pot. When it is slightly browned you can ad the remaining veggies and continue frying for another couple of minutes until everything has softened and gained a little bit of colour. Add the sugar and fry for another 2 minutes. At this point its time to ad the wet ingredients, letting it stew on very low heat for at least an hour until the pork is very tender.
Serve over rice and top it of with chopped peanut and Coriander if available.
