Plum chutney

 

500g nice small plums

1 big grated onion

1 garlic clove

100g brown sugar

50ml white wine vinegar

5 pieces of ground cloves

3 bay leafs

2 medium heat chillies

1 tsp. salt

 

Cook out the sugar with vinegar and spices and grated onion for about 5 min until the sugar is dissolved and it s starting to look a bit syrupy. Ad the cut down plums and cook until tender. Ready! Transfer to sterilized jars! You can leave it chunky or pure it with a stick blender, whichever you fancy!
