Bulgur Salad with an aubergine dip

This is a really nice fresh salad! If you haven’t had fried aubergines in yoghurt before you have to try this dip! Its great!

 

Ingredients

Bulgur (Cooked)

Poached egg

Radicchio

Cucumber

Cauliflower

Tomato

Schallot

Paprika

Cumin

Sumac

Salt

Pepper

Olive oil

Lemon juice

 

Aubergine dip

1 Aubergine cut in cubes

Yoghurt

Salt

Pepper

 

olive oil

2 Garlic cloves

Toasted Sesame seeds

Method

Salt the aubergine cubes and give them a good squeeze to take out the water. Fry in a generous amount of olive oil until golden. Ad the minced garlic and continue frying until thats also golden. Move to a bowl. Mix with the yoghurt, then top it of with the toasted sesame seeds.
