Spiced lentil soup with feta cheese and mint

SPICED LENTIL SOUP WITH CORIANDER, MINT AND FETA CHEESE

1 medium size onion

zest from 1 big lemon

1 carrot

1 rib cellery

1 clove garlic

3 tbsp tomato pure

250g good quality lentils

1l water

Paprika to taste

cumin to taste

salt

Chop all the vegetables then sweat off in some olive oil with salt and spices until softened. ad the tomato and fry a little bit longer. Ad the lentils and water and cook until its ready. Check the seasoning and consistency if you need to ad anything.. salt, water bit extra spices.. olive oil..  depending on how you like it.

Serve with crumbled feta cheese, lemon wedges, and chopped up coriander and mint.
