We did a great white asparagus salad with watermelon and purple basil. I think the colors where really striking and the flavors really worked.
300g white asparagus (Peeled)
300g watermelon in cubes
a handful of purple basil (green i also fine)
2 tbsp extra virgin olive oil
1 tbsp good balsamic vinegar
Salt
Black pepper
Method
Toss all the ingredients in a bowl. Taste for seasoning. Dig in!
