SWEET POTATO AND MISO DUMPLING IN VEGETABLE BROTH
We have been really busy the last 4 weeks so there weren`t any new blog posts. But finally things go back to normal and what better way to start into autumn than eating a great hot soup.
Sweet potato and miso dumpling
1 big Sweet potato baked in its skin and peeled
1 tbsp. miso
ca 100g Rice flour
1 finely chopped spring onion
Salt to taste
Oil
Aluminum foil
Mix all ingredients in a blow. Oil up the foil then wrap the mixture creating little sausage shapes. Place in a steamer and seam ca 15min until firm.
Broth
For the broth we used a basic vegetable stock, then pimped it up with ginger, lemongrass, star anise and loads of vegetables.
1 cube vegetable stock
2l Water
1 knob fresh ginger sliced
1 stick lemongrass bashed
1 star anis
1 fennel
2 ribs celery
2 carrots
1 chili
2 cloves of garlic
1 big onion
coriander stalks
fresh sweetcorn
green beans
carrots thinly sliced
coriander
Simmer for about 40min until all the vegetables are soft. Strain into a second pot. Ad sweetcorn, beans and carrots and let simmer again for about half a minute leaving the veg a little bit crunchy. Season and serve! Garnich with fresh chili, coriander and fennel tops! Enjoy!
