Sweet potato and chickpea falafel

Ingredients

1 sweet potato baked whole until soft and cooked

300g drained chick peas mixed with a stick blender

Rolled oats

1 small onion finely chopped

spices

paprika

nutmeg

curry

Sweat the onion in olive oil until soft and then ad the spices. Cook for another minute or so. Mix in sweet potato and chick pea. If the consistency is too soft ad a bit of oats to thicken it. Shape the falafel cover it in oats on all sides and fry in a frying pan on low heat until golden.

We served it with sliced lettuce, Yoghurt, Quinoa and oyster mushrooms. But it would also be delicious as a burger or whatever you fancy!

150g cooked Quinoa

100g sautéed mixed mushrooms

1 tsp garam masala

Salt

Pepper

Chopped romain lettuce

Olive oil

Lemon juice
