Spinach-Quinoa Salad with Avocado dip, sweet potato and deepfried Oystermushrooms

So today we decided to make a vegan gluten free three course meal. just because we will eat a bit more like this in the future. This salad was so delicious. It was our starter so it`s also the first blog post, the other courses will follow over the next days.


The Salad contents fresh spinach, quinoa, red cabbage, shallots,pomegranate and reddish sprouts with a dressing made of lemon juice, white wine vinegar, olive oil, salt and pepper The fresh lemon juice gives it this extra freshness that I like. As i usually do not weigh the ingredients that i put in a salad I give you a rough estimate thats enough for 4 people.


4 hand full of fresh small spinach leaves

1/4 of a small red cabbage thinly sliced on a kitchen machine

1/2 pomegranate

1/2 hand full of sprouts

1 shallot also very thinly sliced on a kitchen machine

1 cup of cooked quinoa

mix it all in a big bowl and than pour the dressing over.

So you can just eat this as it is or if you want to make a real lunch meal out of it you can put the sides to it as well.

The sweet potato was just cooked in water and than cut into thin slices and put aside. ( one big sweet potato )

Avocado dip

1 avocado

1/2 shallot ver small diced, actually as small as you can dice by hand

a squeeze of fresh lemon juice

1 tablespoon white wine vinegar

1 tabelspoon olive oil



mix all together and put one big spoon of it on every plate.

For the fried Oyster mushrooms I did make a a rice flour batter with some teriyaki sauce, rice vinegar and salt.

take some rice flour and mix it with a few spoons of water till its enough for 12 mushrooms than ad some teriyaki sauce, salt and rice vinegar. Take another plate and put some rice flour on it. Than take one mushroom turn the mushroom in the flour , than dip it in the liquid mix and fry it in a pot in which you heat about 5 cm high sunflower oil. Fry it for about 2 minutes or till golden and than try it. I had to try a bit and than ad some more salt and teriyaki sauce till it had the right amount of flavor, So I recommend you make one test before frying all of them.

You need :

1 pack of Oyster Mushroom or 3 per person

rice flour



teriyeki sauce

rice vinegar

sunflower oil

It was truly delicious and I will for sure eat this on a regular basis in the future. Enjoy.
