Vegan Cauliflower Curry

Cauliflower Curry

I love this dish, it`s super simple and I am cooking it often when I am hungover and crave spices. I am varying the amounts of the ingredients every time so in case you are using more or less tomatoes, or peas or maybe no peas at all don`t worry.

1/2 Cauliflower

2 hands full of frozen green peas

2 onions

3 potatoes

3 big Tomatoes

3 Tabelspoons Joghurt

2 tablespoons tomato paste

1/2 glass tab water

2 tabelspoons olive oil

3 clove of garlic

1 tablespoon Cumin

1 tablespoon Garam Masala

1 tablespoon Curry powder

salt

1 chilli

Basmati rice

Cut the Cauliflower, Onions and Potatoes in relatively big pieces. Heat olive oil in  a big pot, I am using the one that if also good to cook spaghetti.

Put the Cumin, Curry, and Gram Masala in the hot oil stir a few times and than ad the Potatoes, cauliflower and Onions. Cover the pot with the lid and cut the chili in small pieces and peal the garlic. Press the garlic through a garlic press into the pot and also ad the Chili to the dish, stir the whole thing and cover again.

Now cut the tomatoes into small dices and also ad them. Let the whole dish simmer for about 5 minutes. Than ad the tomato paste, salt and some water to it and let it simmer till the potatoes are soft.

Now you can decide if you want the dish to be vegan or not bei either adding some coconut cream or milk or Joghurt, both tastes delicious. And take the frozen peas out and throw them into the pot. Stir the whole thing again and let it cook for just about 1-2 minutes before serving it.

Depending on how spicy you like it you can always use more chili or more cumin ….
